UNIQUE SORTE
Wine from a parcel of centennial vines, located in the heart of the Bibei Valley, Santa Cruz do Bolo. This is a single plot or "sorte" of Godello, planted in 1920 and goblet pruned. Its original and ancient clone, produces small grape clusters and very low yields per vine.It is oriented to the north at an altitude of 680 meters and its granite soil, stands out for the absence of mica which makes its decomposition by oxidation has been slower therefore, its soil is not very deep and planting density is very low.The soil is not ploughed, due to its low depth, and is maintained thanks to the dry Straw cover to preserve its freshness in the dry summer season.
Biodynamic viticulture after ten years of work to restore the natural balance of the soils.
Fermentation is completed in a traditional way for one month with its skins and in open oak vats. Aged for 12 months in used barrels.
TASTING
A traditional wine that takes us back to the old "brisado" wines, but without losing the varietal character and classic elegance of the profile of our wines. It has a great texture in the mouth with a slight reminder of fermentation with skins, but at the same time is fruity, tasty and concentrated on its pass through the mouth, with an exciting acidity that accompanies us until its end of mouth saline, mineral and long.
